BOOTLEGGER BREWING CO. NEARING RELEASE OF "BOOTLEGGER IRISH STOUT"

Wanted to give everyone an update on the Bootlegger Irish Stout.... today has been two weeks since I brewed it and put it in the fermenter....the yeast have had a kick ass party the last few weeks and fermentation has now ceased and it was time to bottle. Here are a few pics of "Bottling Day." The Bootlegger Irish Stout will need 3 more weeks of bottling conditioning and will be ready to enjoy. It was brewed with 64oz of Hopped Dark Malt Extract, 2lbs Dark Dried Malt Extract, 6oz Crystal Grain, 4oz Roast Barley Grain, 2oz Hop Pellets, Ale Yeast, and Priming Sugar for bottling.
BigDave (a.k.a. "DeerSlayer") stopped by just in time to taste a sample of this full bodied black stout, with expressive hop bitterness and a sweet burnt-malt aftertaste....Delicious goodness i might say, .....just wait til' 3weeks from now, give it time to bottle condition and my oh my, make ya' slap ya' momma. I only have a 5-gallon fermentor so i was only able to get about 2.5 cases out of it.
The big gallon growler on the right is an I.P.A that Bootlegger brewed a few months ago.

Why does it have to sit in the bottle for 3 weeks?

ahhh, another home brewer, excellent!

I see that hydrometer is sitting pretty low, what percent alcohol did you end up with?

I am starting a barley wine Tuesday afternoon

during the bottling process i added priming sugar....this will supply the yeast with more sugar to metabolize and the result will be carbonated beer, ya know that nice, refreshing sound when you pop the top on a coldie! this process takes about three weeks for this particular brew.

i think its going to be around 4-4.5% ABV......i need to get a graduated cylinder where i can measure the specific gravity better.
are you using a kit for the barleywine? i used a "True Brew" kit for this stout. The "True Brew" India Pale Ale was very tasty.

I originally got all my kits from morebeer.com, however I have recently graduated to ordering bulk grain and trying other peoples recipes and some of my own experiments... There is a local guy here that can get me pretty much everything I need... I have never been disappointed with a morebeer.com kit, I have probably brewed more than half of them.

I have never bottled though, I only use the 5.3 gallon soda kegs... It seems easier and you only have to wait a day or so to carbonate.. Just turn you CO2 up to around 50-60 PSI and let it sit for a couple of days... then turn it down to around 12 PSI and enjoy... I think I am going to start bottling and six pack of every keg i do, just to keep or give away.

Maybe we can do some sort of mail exchange, or we can just bring a bunch to the Chandelier Island trip this summer!
